Turkey Stew

Makes 6 servings
Ingredients
- 1-1⁄4 pounds turkey breast cutlets, cut into strips
- 2 packages (8 oz. each) sliced fresh mushrooms
- 2 cups diced potatoes
- 1-1⁄2 cups finely chopped carrot and celery sticks
- 1 cup frozen white corn kernels
- 2 cups reduced-sodium chicken broth
- 1 can (10.75-oz.) condensed cream of potato soup, Campbell’s®
- 1 packet (.87-oz.) chicken gravy mix
- 1⁄2 teaspoon dried tarragon
- Salt and ground black pepper
- Crumbled cooked bacon(optional)
- Chopped flat-leaf parsley (optional)
Directions
In a 5-quart slow cooker, stir together turkey, mushrooms, potatoes, carrots and celery, and corn until combined. In a large bowl, whisk together chicken broth, potato soup, gravy mix and tarragon. Pour into slow cooker; stir until combined.
Cover and cook on high heat setting for 4 to 6 hours.
Season to taste with salt and pepper. Spoon into soup bowls. Sprinkle with crumbled bacon and parsley (optional).
