Apple-Spiced Skirt Steak

Prep time: 15 minutes Cook time: 5 to 6 hours (Low) Makes 6 servings

Ingredients

  • 2 cans (14 oz. each) beef broth
  • 1 can (14.5-oz.) diced tomatoes with onions and green peppers
  • 1/2 pound baby Yukon gold potatoes, quartered
  • 1 cup coconut milk
  • 1 cup frozen sliced carrots
  • 1 cup frozen peas
  • 1 cup frozen chopped onions
  • 1 Granny Smith apple, peeled, cored and chopped
  • 3/ cup converted rice
  • 1 tablespoon curry powder
  • 1/2 cup golden raisins
  • (1) 1-1/2-lb. skirt steak
  • 2 teaspoons garam masala
  • Salt and ground black pepper

Directions

1. In a 5-quart slow cooker, stir together beef broth, tomatoes, potatoes, coconut milk, carrots, peas, onions, apple, rice, curry powder and raisins until combined. Sprinkle all sides of skirt steak with garam marsala and salt and pepper to taste. Place steak on top of vegetables and rice in slow cooker.

2. Cover and cook on low heat setting for 5 to 6 hours.

3. Transfer steak to a cutting board and slice across the grain. Serve steak with rice mixture
