Mixed Greens Salad with Fingerlings and Bacon

Start-to-Finish: 10 minutes
Makes 4 servings

Ingredients

  • 4 to 5 fingerling potatoes
  • 1/4 cup mayonnaise, Best Foods®
  • 1/4 cup olive oil and vinegar dressing, Newman’s Own®
  • 1/4 cup real crumbled bacon, Hormel®
  • 1 bag (5.5-ounce) mixed greens, Fresh Express®
  • 2 Roma tomatoes, sliced
  • 1/2 red onion, peeled and sliced
  • Crumbled Gorgonzola cheese (optional)

Directions

Place fingerling potatoes in a microwave-safe dish. Cover and cook on HIGH heat in microwave for 5 to 6 minutes. Remove and let cool to touch. Meanwhile, in a large bowl, whisk together mayonnaise and olive oil dressing. Fold in bacon. Add salad mix and toss.

Divide dressed salad among four chilled salad plates. Cut each fingerling potato in half, lengthwise, and top each salad with 2 halves. Compose salads with the tomatoes, red onion, and cheese (optional).
