Buttermilk-Garlic Smashed Potatoes

Makes 6 servings

Ingredients

  • 1 bag (16-oz.) fresh diced red-skin potatoes
  • 1 cup buttermilk
  • 4 cloves roasted whole garlic, finely chopped, Christopher Ranch®
  • 4 teaspoons butter seasoning, Molly McButter®
  • 1/2 cup low-fat sour cream, Knudsen®
  • Chopped chives (optional)

Directions

In a large microwave-safe bowl, combine potatoes, buttermilk, garlic and butter seasoning. Cover; microwave on high setting (100% power) for 12 to 15 minutes, stirring halfway through cooking time.

Add sour cream. With a potato masher, mash potatoes until creamy but with lumps and peels visible. Garnish with chives (optional).
