Buttermilk-Garlic Smashed Potatoes
Start-to-Finish: 20 minutes
Makes 6 servings
Ingredients
- 1 bag (16-oz.) fresh diced red-skin potatoes
- 1 cup buttermilk
- 4 cloves roasted whole garlic, finely chopped, Christopher Ranch®
- 4 teaspoons butter seasoning, Molly McButter®
- 1/2 cup low-fat sour cream, Knudsen®
- Chopped chives (optional)
Directions
In a large microwave-safe bowl, combine potatoes, buttermilk, garlic and butter seasoning. Cover; microwave on high setting (100% power) for 12 to 15 minutes, stirring halfway through cooking time.
Add sour cream. With a potato masher, mash potatoes until creamy but with lumps and peels visible. Garnish with chives (optional).
